Eileen’s Basic Hummus
It’s Always a given, all ingredients are organic.
2 – 15 oz cans Chickpeas/Garbanzo beans (only rinse and drain ONE can – you need the water from one can for the hummus to be the right consistency)
1/2 cup freshly squeezed lemon juice (2 lemons)
1/2 cup tahini (sesame paste – can buy at the supermarket or make fresh like I do)
fresh (or jarred) minced garlic, to taste – I like A LOT
1/2 teaspoon – 1 teaspoon of sea salt, to taste
1 teaspoon cumin
2 Tablespoons – Organic Extra Virgin Olive Oil – and more for serving
Paprika – for serving
Mary’s Gone Crackers – for dipping
Fresh cut veggies – for dipping
Crushed Red Pepper Flakes
Fresh crushed garlic
Your favorite topping
- In a High Speed blender (e.g., vitamix) or food processor, blend all ingredients except for the paprika until well blended. If you use a food processor you will have to stop and scrape the sides a couple of times.
That’s It!!!! It’s too easy to make this hummus! Once it’s well blended serve with a drizzle of olive oil, a sprinkle of paprika and add any additional favorite toppings. I LOVE EVERYTHING Spicy, so I usually add cayenne pepper and crushed red pepper flakes on top. This hummus is also yummy used in sandwiches and salads.
